Oh, man. This day. Fortunately, the meal plan had my back, because Chili-Mac is a great option on days when nothing else is on your side. I make mine in the Instant Pot using an adaptation of this recipe from Pressure Cooking Today, adapted from a @testkitchen recipe: https://www.pressurecookingtoday.com/tex-mex-chili-mac/ (I use ground turkey and stir in a can of kidney beans at the end, rather than the frozen corn.) It's just what I needed. Warm, comforting, and quick - - with very little clean up. Today's dinner is one of MY favorites: Pork Tenderloin with Garlic Sauce and Skillet Rice and Beans with Corn and Tomatoes - - both from the @testkitchen Mexican cookbook. The garlic sauce dresses up the tenderloin like woah and I so enjoy the addition of a fresh salsa to a rice and beans dish. This one appeals more to the grown ups than the kids, alas. #charlotteexpress ate everything without complaint. #dangeralice ate pork without sauce and cried at her beans and rice which were declared Too Yuck. #samstagram picked out all of the beans and corn and ignored everything else on his plate. No matter. Tomorrow, we'll use the leftovers for burritos (cheese quesadillas for the haters) and there will still be enough rice to tip with a nice runny fried egg for breakfast. #familydinner #homecooking #mexicanfood
