Well, it's French Toast weather in Seacoast NH today. I do my weekly shopping on Mondays, anyway, but I made sure I did my part to clean my local Market Basket out of milk, eggs, and bread. I don't use a recipe for French Toast. Mix some eggs and milk (I add a splash of vanilla), soak up that tasty goodness with bread slices (I use thick-cut brioche), brown in a pan (I use my trusty cast-iron skillet and plenty of butter), and enjoy while you watch the snow fall from the comfort of your home. The kids are huge fans of French Toast day. #charlotteexpress squeezed some fresh orange juice. #dangeralice and #samstagram ate "special bread." And now? I love making a big breakfast on days when everyone is home, but everyone always wants something a little different. Biscuits have been a great solution in finding something for almost everyone. These cathead biscuits are out of control. Huge. Fluffy. Melt in your mouth goodness. Recipe is from @cookscountry, but I sub lard for vegetable shortening and the results are absolutely outstanding. My husband and I use them as a base for biscuits and gravy. #charlotteexpress has hers with butter and jam. #samstagram eats his plain. #dangeralice politely refuses, but that's OK. Today's dinner is one of MY favorites: Pork Tenderloin with Garlic Sauce and Skillet Rice and Beans with Corn and Tomatoes - - both from the @testkitchen Mexican cookbook. The garlic sauce dresses up the tenderloin like woah and I so enjoy the addition of a fresh salsa to a rice and beans dish. This one appeals more to the grown ups than the kids, alas. #charlotteexpress ate everything without complaint. #dangeralice ate pork without sauce and cried at her beans and rice which were declared Too Yuck. #samstagram picked out all of the beans and corn and ignored everything else on his plate. No matter. Tomorrow, we'll use the leftovers for burritos (cheese quesadillas for the haters) and there will still be enough rice to tip with a nice runny fried egg for breakfast. #familydinner #homecooking #mexicanfood

Pizza night! A year or so ago I decided that it was time to learn how to do a decent pizza because we were disappointed in our delivery options. @drude1 hooked me up with a crust recipe from @foodnetwork @bobbyflay and a cooking method from @thekitchn and we haven't looked back. This isn't to say that we don't go out or order pizza anymore, because we totally do, but the best way to get exactly what you want is to make it yourself. Tonight we made two pies. #charlotteexpress put together one with bacon, sausage, pepperoni, onion, bell pepper, and olives. The one pictured has bacon, fresh jalapeño, and crushed pineapple. #samstagram and #dangeralice both deconstructed their slices prior to eating them, but most of the pizza and toppings were consumed. Hei, gurl, hei! Or, winner winner chicken dinner. If you eat meat and you don't learn to cook anything else, ever, find yourself a decent roast chicken recipe. Seriously. It's not difficult and your family will think you are a rock star. I've roasted chickens many ways but my current favorite is from @testkitchen. Their weeknight roast chicken in a skillet made Thursday night into something special. How special? Even #dangeralice ate. And asked for more. I served this with rice pilaf, green beans with smoked paprika and roasted almonds, and braised Brussels sprouts. #charlotteexpress helped prep all the vegetables and #samstagram tried a little of everything.
