Tomato pudding was probably created to be a dessert, but we serve it as a side. My father loves this dish so much he could eat it for entrée, side dish, and dessert in the same meal. It was actually my father who remembered this side dish from his youth. Around the corner from where he lived was the Mylan Plaza Court, Motel and diner. The diner was a meat and three and dad would order the meat of the day +3 side dishes of tomato 🍅 pudding.
