I originally made these as energy bites, but they are also like treats. I found the idea in a health magazine, I just used cleaner ingredients:
• 1 1/2 cups (gluten-free) oats
• 1 cup almond butter
• 1 scoop chocolate (plant-based) protein powder
• 1/4 cup maple syrup
• 2 Tbsp coconut oil
• 1 tsp vanilla
• 1/4 tsp Himalayan salt
• 1 bag dark chocolate chips
• 1 1/2 Tbsp coconut oil for chocolate mixture
• Toppings: crushed nuts, coconut flakes, dried (goji) berries
DIRECTIONS:
1. Mix almond butter, maple syrup, vanilla, & coconut oil in a pot over medium heat.
2. Remove from heat & add in protein powder & oats. Stir until mixed.
3. Evenly distribute mix into muffin tin. (I used a mini muffin tin to make them more bite-sized). Press down until firm.
4. In a pan over low heat, melt together chocolate and coconut oil.
5. Pour melted chocolate over eat oat cup in muffin tin. Top with desired toppings.
6. Freeze for 2 hours.
