Maple syrup is a sweet treat made from the sap of maple trees. During cold winters, trees store starch, which transforms into sugars in spring, filling the sap. Tapping trees and processing the sap creates maple syrup. In 2011, researchers discovered 'Quebecol,' a novel phenolic compound in maple syrup, named after Canada's top producer, Quebec. Surprisingly, Quebecol isn't natural to sap but forms during extraction and processing.
