Planning to make this evening, since we have a pretty big zucchini to use up plus plenty of odds and ends of cheese.
The 35 minutes total is obviously a lie unless you start out with everything ready to mix and go--or else you hold the world speed record in zucchini and cheese grating. I'd also guess closer to 30 than 25 minutes baking time like they're saying. We'll see. I know I'm slow as hell in the kitchen with my OCD and executive function issues (where did those muffin liners go? now where did I put the pan?!?), but I do still get irritated at how common these implausible prep times are.
Anyway, this is one of the things that should work well enough just straight subbing in just about any GF flour blend. I plan to use part corn flour and maybe a little cornmeal, because I think it might be even better that way. Also part buttermilk/kefir and a touch of cayenne to set off the cheese. I may just use garlic powder, because it's easy and should taste fine.
