Ingredients: 6 slices bacon, chopped. 1/2 cup onion, finely diced. 2 cloves garlic, minced. 1/3 cup all-purpose flour. 2 cups broccoli florets, chopped. 3 cups sharp cheddar cheese, shredded. 1 cup Gouda cheese, shredded. 4 cups chicken broth. 1 bottle 12 oz beer. 2 cups whole milk. 1 teaspoon Dijon mustard. Salt and pepper to taste. Chives for garnish.
Instructions: Cook bacon in a big pot until it gets crispy. Take it out and set it aside for decor. In the same pot, cook the garlic and onions in the bacon fat until they are soft. Add the flour and stir to make a roux. Cook for two to three minutes. Slowly whisk in the milk, beer, and chicken broth until the mixture is smooth. Put in the broccoli and cook until it's soft. It will be smooth and melted after you add the Gouda and cheddar cheese. Add the Dijon mustard and season with salt and pepper to taste. Let the flavors blend for another 10 minutes by simmering. Serve hot with chopped chives and crispy bacon on top.
