Ingredients: 2 cups of Greek yogurt. 1 cup of cream cheese. 1 cup of granulated sugar. 3 large eggs. 1 teaspoon of vanilla extract. 1/4 cup of all-purpose flour. 1/4 cup of melted butter. 1 cup of pomegranate seeds. 1/2 cup of pomegranate juice. 1/4 cup of honey. 1 tablespoon of lemon juice. 1 teaspoon of cornstarch.
Instructions: Preheat your oven to 325F 163C. In a large mixing bowl, combine the Greek yogurt, cream cheese, and granulated sugar. Mix until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and all-purpose flour until the mixture is well combined. Pour the melted butter into the mixture and mix until smooth. Grease a 9-inch 23 cm springform pan and pour the cheesecake batter into it. Bake in the preheated oven for 45-50 minutes or until the edges are set and the center is slightly jiggly. Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours or overnight. While the cheesecake is cooling, prepare the pomegranate syrup. In a small saucepan, combine the pomegranate juice, honey, lemon juice, and cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens. Once the cheesecake is chilled, remove it from the springform pan and transfer it to a serving plate. Pour the pomegranate syrup over the top of the cheesecake and sprinkle with pomegranate seeds.
