In this vegan version of roasted cauliflower with Parmesan cheese, nutritional yeast and almond flour are mixed together to make a tasty cheese substitute. It goes well with any meal and tastes great when it's crunchy and salty.
Ingredients: 1 head cauliflower, cut into florets. 2 tablespoons olive oil. 1/4 cup nutritional yeast. 1/4 cup almond flour. 1 teaspoon garlic powder. 1/2 teaspoon onion powder. Salt and pepper, to taste. Fresh parsley, for garnish optional.
Instructions: Preheat the oven to 425F 220C. In a large bowl, toss cauliflower florets with olive oil until evenly coated. In a separate bowl, mix together nutritional yeast, almond flour, garlic powder, onion powder, salt, and pepper. Sprinkle the nutritional yeast mixture over the cauliflower florets and toss until evenly coated. Spread the cauliflower out on a baking sheet lined with parchment paper or a silicone baking mat. Roast in the preheated oven for 25-30 minutes, or until the cauliflower is tender and golden brown, stirring halfway through. Garnish with fresh parsley if desired before serving.
