Want an #easyrecipe or #cookingtips for #GritCakes: GRITS bring 4c salted water to a boil, whisk in 2c grits, cover the pot, bring temp down to low and whisk periodically until water evaporates. Whisk in 2c half and half or whole milk and 3tbsp butter. Cook covered on low for 10 additional minutes. Remove from heat. Dice 2 jalapeños and a few chive sprigs and mix into grits with a handful of cheddar, salt & pepper to taste. Line a casserole dish with parchment paper, pour grits in the dish and smooth until level. Cover dish and place in the freezer to cool (at least 10 mins). This allows grits to become solid. Using a mold or knife, cut grits into desired shape. Heat frying oil in a skillet to medium-high; just enough oil to cover the bottom of the pan. Place grit cakes in the skillet and sear for about 5-8 minutes on both sides; make sure the bottom side browns around the edges before flipping it over.
