Chocolate crepes filled with sweet cherries and a creamy cream cheese filling are a rich and delicious treat. This dessert is great for a special treat at breakfast or brunch.
Ingredients: 1 cup all-purpose flour. 2 tablespoons unsweetened cocoa powder. 2 tablespoons granulated sugar. 1/4 teaspoon salt. 2 large eggs. 1 1/4 cups milk. 2 tablespoons melted butter. 1/2 teaspoon vanilla extract. 1 cup fresh cherries, pitted and halved. 4 oz cream cheese, softened. 1/4 cup powdered sugar. 1/2 teaspoon vanilla extract. Whipped cream, for garnish. Chocolate syrup, for drizzling. Powdered sugar, for dusting.
Instructions: In a mixing bowl, whisk together the flour, cocoa powder, granulated sugar, and salt. In another bowl, beat the eggs, then add the milk, melted butter, and vanilla extract. Mix well. Gradually pour the wet ingredients into the dry ingredients, whisking until the batter is smooth. Heat a non-stick skillet over medium heat and lightly grease it with butter or cooking spray. Pour a small amount of the crepe batter into the skillet, swirling it around to evenly coat the bottom. Cook for about 1-2 minutes or until the edges start to lift. Carefully flip the crepe and cook for another 1-2 minutes on the other side. Repeat this process with the remaining batter. In a bowl, mix together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Spread a generous spoonful of the cream cheese mixture onto each crepe. Place cherry halves on one half of each crepe and fold the other half over the cherries. Garnish with whipped cream and a drizzle of chocolate syrup. Dust with powdered sugar before serving.
