29 12 11 - Sour Cherry Macarons
Dearest Readers,
Just when you thought I disappeared or retired from making macarons...I am back! It has certainly been a while since my last batch of macarons and my failed batch for Christmas really cut deep...perhaps it was because of my long break from making them?
...but I'm back!
Today's batch of macarons were made with a girl friend from Uni, Kath. She's been wanting to make macarons for a while and finally....today was the day!
We made two batches with a focus on seasonal, Summer fruits. This post, will cover one of them as the other batch have yet to be constructed (yes, the filling is still setting!!).
- Sour Cherry Macarons -
x1 Batch of White canvas macarons with 1 teaspoon of powdered red colouring
x1 Batch of Sour Cherry ganache (make this the night prior)
- Sour Cherry Ganache -
Ingredients
100g White chocolate (I used Cadbury Dream)
1/4 Cup of pureed sour cherries (purchased from supermarket)
2 tables spoon of thickened cream
1 tea spoon of natural lemon juice
Method
1. Puree 1/4 cup of Pitted Cherries in a blender (without the juice) I used Marco Polo, Morello Pitted Cherries, purchased from Woolworths in Melbourne. Pour into a small bowl and set aside.
2. Heat the thickened cream in a saucepan, bring to boil and remove from heat.
3. Break up white chocolate, place into boiled cream and stir through until fully dissolved.
4. Pour 1/4 cup of pureed cherries into the mixture and stir until combined. Drop tea spoon of lemon juice and mix through. Pour into a separate bowl and set aside to cool. Once cooled, place the mixture into the fridge to set. (Over night is best)
There you have it, Sour Cherry macarons.
