Cherry Garcia Cupcakes are a delightful treat inspired by the famous ice cream flavor. These cupcakes are rich, chocolatey, and bursting with the sweet and tangy flavors of maraschino cherries. They are topped with a creamy cherry-almond frosting and adorned with more cherries and chocolate chips for the ultimate dessert experience.
Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup unsweetened cocoa powder. 1 cup granulated sugar. 1/2 cup unsalted butter, softened. 2 large eggs. 1 teaspoon vanilla extract. 1/2 cup buttermilk. 1/2 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup maraschino cherries, chopped. 1/2 cup mini chocolate chips. For frosting:. 1 cup unsalted butter, softened. 3 cups powdered sugar. 1/4 cup maraschino cherry juice. 1/2 teaspoon almond extract. 1/2 cup chopped maraschino cherries. 1/2 cup mini chocolate chips. Additional maraschino cherries and chocolate chips for garnish.
Instructions: Preheat your oven to 350F 175C and line a cupcake pan with cupcake liners. In a medium-sized bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside. In another bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, beginning and ending with the dry ingredients. Mix until just combined. Gently fold in the chopped maraschino cherries and mini chocolate chips. Divide the batter evenly among the cupcake liners, filling each about 2/3 full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and let them cool completely on a wire rack. For the frosting, beat the softened butter until creamy in a large bowl. Gradually add the powdered sugar, cherry juice, and almond extract, and beat until smooth and fluffy. Fold in the chopped maraschino cherries and mini chocolate chips into the frosting. Once the cupcakes are completely cooled, pipe or spread the cherry frosting onto each cupcake.
