Green food coloring optional. For the Frosting:. 1 cup unsalted butter, softened. 4 cups powdered sugar. 1/4 cup maraschino cherry juice. 1 tablespoon lime zest. 1 tablespoon fresh lime juice. 1/2 teaspoon cherry extract. Red food coloring optional. Maraschino cherries and lime slices for garnish.
Instructions: Preheat your oven to 350F 175C and line a cupcake pan with paper liners. In a mixing bowl, combine the white cake mix, softened butter, eggs, buttermilk, maraschino cherry juice, lime zest, fresh lime juice, cherry extract, and green food coloring if using. Mix until well combined. Gently fold in the chopped maraschino cherries into the batter. Fill each cupcake liner about two-thirds full with the batter. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean. Remove the cupcakes from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely. While the cupcakes are cooling, prepare the frosting. In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, maraschino cherry juice, lime zest, fresh lime juice, cherry extract, and red food coloring if desired.
