Instructions: For the cookies, mix the flour, baking powder, and salt in a medium-sized bowl using a whisk. Mix the butter and sugar until they are smooth in a different large bowl. You can add the egg, almond extract, vanilla extract, and red food coloring if you want to. Mix everything together well. Mix the dry ingredients into the wet ingredients one at a time until a dough forms. Make two discs out of the dough, cover them with plastic wrap, and put them in the fridge for at least an hour. Warm the oven up to 350F 175C and put parchment paper on a baking sheet. On a floured surface, roll out the chilled dough until it is about 1/4 inch thick. Use cookie cutters to make big cookie shapes, then put them on the baking sheet that has been made ready. For 10 to 12 minutes, or until the edges are just beginning to turn golden. For a few minutes, let the cookies cool on the baking sheet. Then, move them to a wire rack to cool completely. Put the softened butter in a bowl and beat it until it is smooth and creamy. Add the powdered sugar, cherry preserves, vanilla extract, and a pinch of salt one at a time. Beat the buttercream until it is smooth and well mixed in. Putting the cookies together: After the cookies have cooled all the way down, cover one flat side with a thick layer of cherry buttercream. Put another cookie on top to make a sandwich.
