Apple Chess Pie (gluten free)
My darlings had their birthday today, and they wanted an apple cake. I am not a fan of apple cakes, they are often a bit dry and bland IMHO. I do love me a good pie though, so we reached and agreement, luckily :) This pie is lovely and moist with a lot of taste and texture. I will definitively have to make it soon again, as it was a hit with the fam. The pizza stone is meant to make the crust less soggy, and I believe it might have worked.
Crust
In a food processor, run in short burst until crumbly: 1 ½ cup gluten free flour (Schär pattisserie) 1/2 cup corn flour (fine) ½ tsp salt 110 gr cold butter, coarsely diced
Add little by little, don't over mix: 1/3 cup cold water
Spread out quickly in a pan and keep in fridge for at least 30 minutes
Filling
Mix in a bowl: 2 cups sugar 4 tbsp yellow cornmeal 2 tsp ground cinnamon 4 large eggs lightly beaten ¼ cup skimmed milk Splash of cream 110 gr butter melted 1 tsp vanilla extract
Add and stir: 2 Granny Smith apples peeled and diced
Preheat the oven at 180C, preferably with a pizza stone if available Pour the filling onto the crust Place the pan on the hot stone or a hot baking sheet Bake for about 1h, or until the filling is still jiggly but not runny in the middle Let the pie cool and serve at room temperature, together with ice cream, custard or as a did with cream whipped with vanilla and caster sugar
