Balmoral Chicken
I had guests over for dinner last night, so whipped up this, its simple yet classy in my eyes.
4 Chicken Breasts 300g Haggis 8 Rashers Bacon Whisky Sauce (Try our recipe found here) Best served with Mashed Potatoes and Green Vegetables.
Preheat oven to 200c | Fan 180 Using a knife, cut a slit along the side of each chicken breast, leaving about 1-2 cms at each end. Stuff Haggis into the slits, and wrap a couple of rashers of bacon around the breasts. (Helps hold everything in) Wrap the chicken breasts in tinfoil and place on a tray in the centre of the oven, and cook for 25-30 minutes until the chicken is cooked through (Note: the tinfoil is more to stop everything going dry, keeps the moisture locked in) Serve with Mashed Potatoes and Green Vegetables, and lashings of Whisky Sauce over the top.
