This Rustic Chicken & Veggie Cobbler is a hearty and comforting dish. It has a fluffy cobbler crust on top of tender chicken and colorful vegetables in a savory gravy. Great for a cozy family dinner or having people over.
Ingredients: 1 lb chicken breast, diced. 2 cups mixed vegetables carrots, peas, corn. 1 onion, chopped. 2 cloves garlic, minced. 2 cups chicken broth. 1 cup all-purpose flour. 1/2 cup milk. 1/4 cup unsalted butter. 2 tsp baking powder. 1/2 tsp salt. 1/4 tsp black pepper. 1/4 tsp dried thyme. 1/4 tsp dried rosemary. 1/4 tsp dried parsley.
Instructions: Warm the oven up to 190C 375F. Melt the butter in a pan over medium-low heat. Put in the garlic and onions, and cook them until they get soft. Cook the chicken until it turns brown after adding it to the pan. Add the herbs and mixed vegetables and stir them in. Cook for two more minutes. Add the chicken broth and bring it to a simmer. Then, put the mixture in a baking dish. Put flour, baking powder, salt, and pepper in a bowl and mix them together. Add butter and mix until the mixture looks like big crumbs. Add milk and mix until dough forms. Place spoonfuls of dough on top of the chicken and vegetable mix in the baking dish. When the top of the cobbler is golden brown and cooked all the way through, bake it for 25 to 30 minutes. If you want, you can serve it hot with fresh parsley on top.
