I’ve always wondered why people go crazy over fusion cuisine, and we never ventured to try @chinchin though we have heard so much about it. So glad we had a meal there on Sunday. My favourite savoury dish was the salmon with a dry red curry roasted in (I think) banana leaf. Superb combination. Reminded me of sambal stingray that I absolutely love and miss in Singapore. I’m inspired to try doing some sambal salmon soon. And the overall star dish of the night was this panna cotta in Viet iced coffee with cashew praline. Every mouthful was a bomb of goodness. I bet we could each have finished our own plate even though we were full, it was that good! Just salivating thinking of this divine dessert 🤤 .
