Ingredients: - 2 pounds pork belly, skin on, cut into 2-inch cubes. - 3 tablespoons vegetable oil. - 1/4 cup Shaoxing wine. - 1/2 cup soy sauce. - 1/4 cup dark soy sauce. - 1/4 cup oyster sauce. - 2 tablespoons rock sugar or brown sugar. - 5 slices ginger. - 4 cloves garlic, minced. - 2 star anise. - 1 cinnamon stick. - 2 stalks green onions, chopped for garnish.
Instructions: In a wok or large pot, heat vegetable oil over medium heat. Add pork belly cubes and sear until all sides are browned. Pour in Shaoxing wine, soy sauce, dark soy sauce, and oyster sauce. Stir to coat the pork evenly. Add rock sugar, ginger, minced garlic, star anise, and cinnamon stick to the pot. Mix well. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours or until the pork belly is tender and the sauce has thickened. Once done, remove the ginger, star anise, and cinnamon stick. Garnish with chopped green onions before serving.
