This chipotle avocado veggie burger has a great mix of tastes and textures. It's great for vegetarians and anyone else who wants a tasty burger without meat. With its smooth avocado, smoky chipotle mayo, and tasty veggie patty, this burger is sure to become a favorite!
Ingredients: 1 can 15 oz black beans, drained and rinsed. 1/2 cup breadcrumbs. 1/4 cup grated carrot. 1/4 cup finely chopped onion. 1/4 cup diced red bell pepper. 1/4 cup diced green bell pepper. 1/4 cup chopped fresh cilantro. 1 clove garlic, minced. 1 tsp ground cumin. 1/2 tsp chili powder. 1/4 tsp smoked paprika. Salt and pepper to taste. 4 burger buns. 4 slices of pepper jack cheese optional. Lettuce leaves, tomato slices, and avocado slices for topping. Chipotle mayo or your favorite burger sauce for serving.
Instructions: In a large bowl, mash the black beans with a fork or potato masher until mostly smooth but with some texture remaining. Add breadcrumbs, grated carrot, chopped onion, diced red and green bell pepper, cilantro, minced garlic, ground cumin, chili powder, smoked paprika, salt, and pepper to the mashed black beans. Mix until all ingredients are well combined. Divide the mixture into 4 equal portions and shape each portion into a patty. Preheat a grill or stovetop griddle over medium-high heat. If using a grill, oil the grates to prevent sticking. Grill the veggie burger patties for about 4-5 minutes per side, or until they are heated through and have grill marks. If desired, add a slice of pepper jack cheese to each patty during the last minute of cooking. Toast the burger buns on the grill for 1-2 minutes until lightly browned. Assemble the burgers by placing a veggie patty on the bottom half of each bun. Top with lettuce, tomato slices, and avocado slices. Spread chipotle mayo or your favorite burger sauce on the top half of the buns and place them on top of the assembled burgers. Serve hot and enjoy your delicious chipotle avocado veggie burger!
