This vegan version of the classic New England Spider Cake is moist, rich, and chocolatey, with a hint of nuttiness from the walnuts. The addition of brewed coffee enhances the chocolate flavor and adds depth to the cake.
Ingredients: 1 1/2 cups all-purpose flour. 1 cup coconut sugar. 1/4 cup cocoa powder. 1 teaspoon baking soda. 1/2 teaspoon salt. 1 cup unsweetened almond milk. 1/3 cup vegetable oil. 1 tablespoon apple cider vinegar. 1 teaspoon vanilla extract. 1/2 cup vegan chocolate chips. 1/2 cup chopped walnuts. 1 cup brewed coffee, cooled.
Instructions: Set the oven to 350F 175C and heat it up. Butter a round cake pan that is 9 inches in diameter. Mix the flour, baking soda, salt, coconut sugar, and cocoa powder in a large bowl with a whisk. Put the almond milk, vegetable oil, apple cider vinegar, and vanilla extract in a different bowl and mix them together. Add the wet ingredients to the dry ones and mix them together until they are just mixed. Just add the chopped walnuts and vegan chocolate chips and mix them in. Pour the batter into the cake pan that has been ready. Pour the cooled coffee over the batter slowly. Don't stir. Put it in the oven and bake for 30 to 35 minutes, or until a toothpick stuck in the middle comes out clean. Cool the cake in the pan for 10 minutes, then move it to a wire rack to cool all the way down. Serve and have fun!
