Ingredients: 1 1/2 cups graham cracker crumbs. 1/2 cup unsalted butter, melted. 2 cups cream cheese, softened. 1/2 cup granulated sugar. 2 large eggs. 1 tsp vanilla extract. 1 cup semi-sweet chocolate chips.
Instructions: Preheat your oven to 350F 175C and line a 9x9-inch 23x23 cm baking pan with parchment paper, leaving some overhang for easy removal. In a mixing bowl, combine the graham cracker crumbs and melted butter. Press this mixture firmly into the bottom of the prepared pan to form the crust. In another bowl, beat the softened cream cheese until smooth. Add in the sugar, eggs, and vanilla extract, and continue to beat until well combined. Stir in the semi-sweet chocolate chips into the cream cheese mixture. Pour the cream cheese mixture over the graham cracker crust in the pan, spreading it evenly. Bake in the preheated oven for about 30-35 minutes, or until the edges are set and the center is slightly jiggly. Remove from the oven and let it cool to room temperature. Then refrigerate for at least 2 hours, or until the cheesecake is completely chilled and set. Once chilled, use the parchment paper overhang to lift the cheesecake bars out of the pan.
