A delightful Caprese salad with a spicy twist, featuring layers of ripe tomatoes, creamy mozzarella, and fragrant basil. Drizzled with a zesty chili champagne vinaigrette and topped with citrus-infused garlic croutons, this salad is a burst of flavor in every bite.
Ingredients: 4 large ripe tomatoes. 1 pound fresh mozzarella cheese. 1 bunch fresh basil leaves. 2 cloves garlic. 4 slices of bread. 1/4 cup olive oil. 1 teaspoon chili flakes. 1/4 cup champagne vinegar. 1/2 cup extra virgin olive oil. Salt and pepper to taste. 1 lemon. 1 orange.
Instructions: There should be 1/4-inch thick rounds of tomato and mozzarella cheese. Put the fresh basil leaves, tomato, and mozzarella on a serving platter in a pattern that goes from left to right. Slowly heat up 1/4 cup of olive oil in a small saucepan. Add the chili flakes and minced garlic. Saut for one to two minutes, until the garlic smells good, then take the pan off the heat. Pour the garlic-chili oil mix over the basil, tomato, and mozzarella. To make the vinaigrette, put the extra virgin olive oil, salt, and pepper in a different bowl and whisk them together. Put the champagne vinaigrette on top of the salad. Tear the bread into cubes and toast them in a pan with a little olive oil until they are golden brown and crispy. Zest the orange and lemon and grate the zest over the croutons. Then squeeze the juice of both fruits over the croutons as well. Just before you serve the Caprese salad, sprinkle the citrus garlic croutons on top of it. If you want, you can add more fresh basil leaves as a garnish. Serve right away and enjoy!
