Ingredients: 1 cup water. 1/2 cup unsalted butter. 1 cup all-purpose flour. 4 large eggs. 1/4 teaspoon salt. 2 cups heavy cream. 1/2 cup chocolate chips. 1 teaspoon vanilla extract. 1/2 cup powdered sugar.
Instructions: Set oven temperature to 400F 200C. Bring the butter and water to a boil in a saucepan. Add the flour and salt and stir until a ball forms. Take off the heat and gradually beat in each egg until smooth. To make eclairs, pipe the dough onto a baking sheet. Fry for 30 to 35 minutes, or until well-browned. Melt chocolate chips, 1/2 cup heavy cream, and vanilla extract in a separate saucepan over low heat. Blend until a smooth consistency is achieved. Beat in the powdered sugar and the remaining heavy cream until stiff peaks form. Halve the eclairs lengthwise after they have cooled. Drizzle with chocolate sauce and top with whipped cream.
