Indulge in the richness of this decadent vegan chocolate mousse cake. Creamy chocolate mousse sits atop a crunchy almond flour crust, creating a perfect balance of textures and flavors. This dessert is sure to satisfy any chocolate lover's cravings, and it's dairy-free and egg-free!
Ingredients: 1 1/2 cups vegan chocolate chips. 1/2 cup coconut cream. 1/4 cup maple syrup. 1 tsp vanilla extract. 1 1/2 cups almond flour. 1/4 cup cocoa powder. 1/4 cup maple syrup. 1/4 cup coconut oil, melted. Pinch of salt. Fresh berries for garnish optional.
Instructions: In a saucepan, melt the vegan chocolate chips over low heat. Once melted, stir in the coconut cream, maple syrup, and vanilla extract until well combined. Remove from heat and let it cool. In a mixing bowl, combine almond flour, cocoa powder, maple syrup, melted coconut oil, and a pinch of salt. Mix until it forms a dough. Press the dough into the bottom of a cake pan to form the crust. Pour the chocolate mousse mixture over the crust and spread evenly. Refrigerate the cake for at least 4 hours or until set. Once set, remove from the pan, garnish with fresh berries if desired, and serve.
