Mango Ceviche

We've discovered a beautiful pairing of a summer white fish ceviche with our Lot 359 2011 Riesling / Chenin Blanc. The delicate nature of this dish is not overpowered by the lighter body of the Riesling, while the Chenin Blanc adds a beautiful floral note to the citrus in this summer appetizer.
