What a fun treat! These Apple Surprise Muffins have warm apples spiced with cinnamon hidden inside. This is a great snack or breakfast food!
Ingredients: 2 cups all-purpose flour. 1/2 cup granulated sugar. 2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1/2 tsp ground cinnamon. 1/4 cup unsalted butter, melted. 1 cup buttermilk. 1 large egg. 1 tsp vanilla extract. 2 medium apples, peeled, cored, and diced. 1/4 cup brown sugar. 1/2 tsp ground cinnamon for apple filling.
Instructions: Preheat your oven to 375F 190C and line a muffin tin with paper liners. In a large bowl, combine the flour, granulated sugar, baking powder, baking soda, salt, and 1/2 tsp of ground cinnamon. In another bowl, whisk together the melted butter, buttermilk, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay. In a separate bowl, toss the diced apples with the brown sugar and 1/2 tsp of ground cinnamon to create the apple filling. Fill each muffin cup in the tin about halfway with the muffin batter. Add a spoonful of the apple filling on top of the batter in each cup. Cover the apple filling with a little more muffin batter until each cup is about 2/3 full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Enjoy your delicious Apple Surprise Muffins!
