2012 Domaine du Bagnol Cassis
So I tried something a little different with this dry Provençal white. I tried it over the course of a few days. Day 1 - the nose was a bit closed but you get hints of white peach, honeydew, grapefruit, raw almonds and macadamia nuts. Gentles peaches on the palate with honeysuckle, white flowers, Okinawa sea salt, melon, white tea, and a hint of anise on the finish. Day 3 - the nose was much more expressive with more pronounced white peach, melon, grapefruit, nuts, lemon curd, and green herbs. The lemon curd gives way to pineapple, melon, donut peach, and almond powder on the palate - more expressive but still rather gentle. I’d have this with seafood, like with a nice bouillabaisse.
