This scallop pasta with garlic and white wine is a classy and tasty dish that's great for a special dinner or having people over. The scallops' sweetness goes well with the garlic's strong smell and the white wine sauce's bright taste.
Ingredients: 12 large scallops. 250g pasta of your choice. 4 cloves garlic, minced. 1/2 cup dry white wine. 2 tablespoons olive oil. Salt and pepper to taste. Fresh parsley, chopped, for garnish.
Instructions: Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside. In a large skillet, heat olive oil over medium heat. Add minced garlic and saut until fragrant, about 1-2 minutes. Pat dry the scallops with paper towels to remove excess moisture. Season with salt and pepper. Increase the heat to medium-high and add the scallops to the skillet. Sear for about 2-3 minutes on each side until golden brown and cooked through. Be careful not to overcook. Remove the scallops from the skillet and set aside. Deglaze the skillet with white wine, scraping up any browned bits from the bottom of the pan. Add the cooked pasta to the skillet and toss to coat it with the garlic and wine sauce. Serve the pasta onto plates and top with the seared scallops. Garnish with chopped fresh parsley before serving.
