Sunday dinner! Happy Sunday everyone! For Dinner tonight, I cooked for my family. I made my homemade potato salad, spaghetti squash, and roast chicken. I obviously didn't eat the chicken since I'm a vegetarian, so this plate above was my dinner. I make a healthy and clean potato salad that consists of red potatoes, salt, pepper, olive oil, vinegar, plain Greek yogurt, oregano, fresh lemon, onion and garlic powder, basil, and some bell peppers. For the spaghetti squash, I roast it in the oven for about 45 minutes, coated in salt, pepper, olive oil, Rosemary, and basil. Spaghetti squash is a great pasta alternative. As a side dish, I also made a salad with mixed greens, mushrooms, tomatoes, and avocado. This was a low protein meal for me. For vegetarians, to add protein to a meal like this, try adding tofu, chick peas, nuts, or beans.
