Sandwich heaven! I threw together 2 pans of veggies to roast: beets, onions, eggplant, red bells and portobello mushrooms. I also made a cashew cream cheese spread with avo mayo, parsley and lemon zest. Lightly toasted sourdough, some fresh romaine and sprouts yaaaaaaas! So filling, savory and bursting with flavor and plenty for 3 big sammies! Every year my family and I make our very own tomato sauce for the year. It’s a huge process with all of the family working hard together. Usually a 9-5 process but I managed to squeeze it into a 3 min video. Completely organic, fresh tomatoes and no preservatives just tomatoes and lots and lots of mason jars.
