Delicious and chewy coconut date cookies with a hint of almond flavor. These cookies are gluten-free, dairy-free, and perfect for snacking or dessert.
Ingredients: 1 cup shredded coconut. 1 cup chopped dates. 1/2 cup almond flour. 1/4 cup coconut flour. 1/4 cup coconut oil, melted. 2 tbsp honey or maple syrup. 1 tsp vanilla extract. 1/4 tsp salt.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a large bowl, combine the shredded coconut, chopped dates, almond flour, coconut flour, and salt. In a separate bowl, whisk together the melted coconut oil, honey or maple syrup, and vanilla extract. Pour the wet ingredients over the dry ingredients and mix well until a dough forms. Using your hands, roll the dough into small balls and place them on the prepared baking sheet. Flatten each ball slightly with your fingers. Bake in the preheated oven for 12-15 minutes, or until the cookies are golden brown around the edges. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Once cooled, the coconut date cookies are ready to be enjoyed!
