These vegan chocolate mint coconut donuts taste great, with a strong chocolate flavor and a hint of cool mint. Added shredded coconut on top to give it more texture and flavor.
Ingredients: 1 cup all-purpose flour. 1/2 cup cocoa powder. 1/2 cup sugar. 1 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 3/4 cup coconut milk. 1/4 cup coconut oil, melted. 1 tsp vanilla extract. 1/2 tsp peppermint extract. 1/4 cup vegan chocolate chips. 1/4 cup shredded coconut, for topping.
Instructions: Preheat the oven to 350F 175C and grease a donut pan. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt. Add coconut milk, coconut oil, vanilla extract, and peppermint extract to the dry ingredients. Stir until just combined. Fold in chocolate chips. Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full. Bake for 10-12 minutes, or until a toothpick inserted into the donuts comes out clean. Allow the donuts to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely. Sprinkle shredded coconut over the cooled donuts. Serve and enjoy!
