This Pulled Pork Sweet Potato Hash with Eggs is a hearty and delicious breakfast option that combines the flavors of tender pulled pork, sweet potatoes, and perfectly cooked eggs. It's a satisfying meal that will keep you fueled for the day ahead.
Ingredients: 2 cups pulled pork. 2 medium sweet potatoes, peeled and diced. 1 onion, diced. 2 cloves garlic, minced. 1 red bell pepper, diced. 4 large eggs. 2 tablespoons olive oil. Salt and pepper to taste. Chopped fresh parsley for garnish.
Instructions: Warm up a big pan with olive oil over medium-low heat. Add the sweet potatoes that have been cut up. Cook for about 10 minutes, or until they start to brown and get soft. Dice the red bell pepper, onion, and garlic. It will take about 5 to 7 minutes of sauting until the vegetables are soft and slightly caramelized. Add the pulled pork and stir it in. Cook for another two to three minutes to heat everything through. In the hash mix, make four wells. In each well, crack an egg. Put the lid on top of the pan and cook the eggs until the egg whites are set but the yolks are still a little runny. For sunny-side-up eggs, this should take about 4 to 5 minutes. Change the cooking time to get the egg the way you like it. Add pepper and salt to taste. Add chopped fresh parsley as a garnish. Enjoy while hot!
