Ingredients: 1 cup quinoa. 1/2 cup maple syrup. 1/4 cup coconut oil. 1/4 cup almond butter. 1/4 teaspoon salt. 1/2 teaspoon vanilla extract. 1/4 teaspoon baking soda.
Instructions: Preheat oven to 325F 160C. Line a baking sheet with parchment paper. Rinse quinoa thoroughly and drain. In a saucepan, combine maple syrup, coconut oil, almond butter, salt, and vanilla extract over medium heat, stirring until well combined and smooth. Remove from heat and stir in quinoa until evenly coated. Spread the mixture onto the prepared baking sheet, pressing it into an even layer. Bake for 20-25 minutes or until golden brown, stirring halfway through to ensure even cooking. Remove from oven and let cool for a few minutes. Sprinkle baking soda over the mixture and quickly stir until evenly distributed the mixture will bubble. Allow the brittle to cool completely before breaking it into pieces. Store in an airtight container at room temperature.
