This Snowball White Chocolate Coconut Truffle Parfait has layers of creamy white chocolate, coconut, and graham crackers that are sure to please. There is just the right amount of sweetness and texture in this dessert.
Ingredients: 2 cups white chocolate chips. 1 cup heavy cream. 1 cup shredded coconut. 1 cup crushed graham crackers. 1/2 cup unsalted butter, melted. 1/4 cup powdered sugar. 1 teaspoon vanilla extract. Whipped cream for garnish. Additional shredded coconut for topping.
Instructions: Melt the white chocolate chips and 1/2 cup of heavy cream in a bowl that can handle heat. You can do this over a double boiler or in the microwave. Mix until it's smooth. Shred the coconut, crush the graham crackers, melt the butter, add the powdered sugar, and vanilla extract to a different bowl. To make the truffle mixture, mix it well. Mix the truffle mixture with the melted white chocolate until everything is well mixed together. Place the truffle mixture in a parfait glass that has been chilled. In between each layer, drizzle some heavy cream over the top. Add more layers until the glass is full, and top it off with a layer of truffle mixture. Put the parfait in the fridge for at least two hours so it can set. Put more shredded coconut on top and garnish with whipped cream before serving.
