Ingredients: 2 large sweet potatoes, peeled and diced. 1/2 cup tapioca flour. 1/4 cup coconut flour. 2 tbsp arrowroot flour. 1 tsp dried rosemary. Salt, to taste. Coconut oil, for cooking.
Instructions: Boil the sweet potatoes until fork-tender, then drain and mash them in a large bowl. Add tapioca flour, coconut flour, arrowroot flour, dried rosemary, and salt to the mashed sweet potatoes. Mix well until a dough forms. On a clean surface, roll the dough into long ropes, about 1 inch thick. Cut the ropes into small pieces to form gnocchi. Bring a large pot of water to a boil. Drop the gnocchi into the boiling water and cook until they float to the surface, about 2-3 minutes. Remove the gnocchi with a slotted spoon and transfer them to a plate. In a skillet, heat coconut oil over medium heat. Add the cooked gnocchi to the skillet and saut until they are lightly browned on the outside, about 2-3 minutes. Serve hot, garnished with fresh rosemary if desired.
