Blueberry oat protein pancakes that are healthy, tasty, and great for the whole family. They are also keto-friendly. These pancakes are a great choice for breakfast or brunch because they don't have any added sugar and are full of protein.
Ingredients: 2 cups almond flour. 1/2 cup vanilla protein powder. 1/4 cup ground flaxseed. 1/4 cup unsweetened almond milk. 4 large eggs. 1/2 teaspoon baking powder. 1/2 cup fresh blueberries. 1 tablespoon coconut oil for cooking.
Instructions: Put almond flour, protein powder, ground flaxseed, almond milk, eggs, and baking powder in a bowl. As you mix, a smooth batter will form. Mix the fresh blueberries into the batter very slowly. Warm up the coconut oil in a skillet that doesn't stick over medium fire. For each pancake, pour about 1/4 cup of the batter onto the pan. Once the surface starts to bubble, cook for another two to three minutes. Then flip it over and cook for one to two more minutes, until it turns golden brown. Do it again with the rest of the batter. Enjoy while still warm!
