Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and creamy. Add the egg and vanilla extract to the butter-sugar mixture, and mix well. In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and finely ground coffee beans. Gradually add the dry ingredient mixture to the wet ingredients, mixing until well combined. If desired, fold in the chocolate chips. Scoop spoonfuls of cookie dough onto the prepared baking sheet, leaving some space between each cookie.
