Baked zucchini with creamy goat cheese on top is a tasty and healthy dish. This recipe is great for people who have to follow certain diets because it is gluten-free, vegetarian, and good for people on the keto diet.
Ingredients: 3 medium zucchinis, sliced lengthwise. 1 tablespoon olive oil. Salt and pepper to taste. 4 ounces goat cheese, crumbled. 2 tablespoons chopped fresh basil. 2 tablespoons chopped fresh parsley.
Instructions: Preheat the oven to 400F 200C. Place the sliced zucchinis on a baking sheet. Drizzle with olive oil and season with salt and pepper. Bake for 15-20 minutes, or until the zucchinis are tender. Remove from the oven and sprinkle with crumbled goat cheese. Return to the oven for 3-5 minutes, or until the cheese is melted and bubbly. Garnish with chopped basil and parsley before serving.
