Ingredients: 4 cups Concord grapes, stemmed and washed. 1/2 cup water. 1/4 cup lemon juice. 4 cups granulated sugar. 1 pouch 3 oz liquid pectin.
Instructions: Crush the grapes in a large saucepan using a potato masher. Add water and lemon juice to the crushed grapes, then bring the mixture to a boil over medium-high heat. Reduce the heat to low, cover, and simmer for 10 minutes. Strain the grape mixture through a fine mesh strainer or cheesecloth into a large bowl, extracting as much juice as possible. Return the strained grape juice to the saucepan and stir in the sugar. Bring the mixture back to a boil, stirring constantly, and let it boil for 1-2 minutes until the sugar is fully dissolved. Stir in the liquid pectin and boil for an additional 1-2 minutes, continuing to stir. Remove from heat and skim off any foam from the surface of the jelly. Pour the hot grape jelly into sterilized jars, leaving about 1/4 inch of headspace. Seal the jars with lids and process them in a boiling water bath for 5-10 minutes to ensure they are properly sealed. Let the jars cool, and store them in a cool, dark place for up to a year.
