Ingredients: 1/2 cup yellow mustard seeds. 1/2 cup brown mustard seeds. 1 cup apple cider vinegar. 1/2 cup water. 1/4 cup honey. 1 teaspoon salt.
Instructions: Mix the brown and yellow mustard seeds together in a bowl. Place the apple cider vinegar, water, honey, and salt in a saucepan and heat over medium heat until it starts to simmer. After adding the heated liquid to the mustard seeds, stir everything together. To allow the mustard seeds to absorb the liquid and swell, cover the bowl and leave it at room temperature for a full day. Once a day has passed, process the mixture in a food processor until the desired consistency is reached. It can be left somewhat grainy or made smooth. Spoon the mustard jam into a sterile jar or other receptacle. To allow the flavors to mingle, refrigerate for a minimum of two hours prior to usage. Use as a dipping sauce or as a condiment for sandwiches or grilled meats.
