Bajan-Style Conkies (Vegan)

A sweet treat that is made from cornflour, pumpkin, coconut, sweet potato with a medley of spices that is wrapped in banana leaves and gently steamed which results in a moist pudding.

It seems we have some confused people so let me just let you all know this is how a conkie is supposed to look. During this month of independence I want to see proper looking conkies (with or without raisins) I don’t want to see any abominations!! People making & selling wet soggy conkies, putting ketchup on them and all sorts of madness.
