In a way it's not surprising that Sephiroth in new-canon is just unrecognizable to me because my interpretation of him is so informed by the specific context with which the OG presents him. Your first meaningful acquaintance with him is when you learn he let you out of prison and killed President Shinra, and then you get into Nibelheim. By then, you've had 4ish hours in Midgar designed to convince you that the world you're in is deeply corrupt, and get you on the side of a group taking extreme but justifiable measures redress that. They present Sephiroth to you in such a way and at such a time in the narrative as to make you believe that he shares some of your worldview, and from there I think it's really quite natural to begin to read him as a nihilist doomer first and foremost (like many FF villains before and after him). Support for that reading stacks up pretty easily after that, and makes all his God monologuing make sense - the very heart of what he's expressing is that there's no hope for this world and a new one must be made.
But if you strip away the context of that presentation, you lose all of that. It's not something he directly expresses and in fact he doesn't directly express a whole lot - this is the least cynical explanation for why later entries just have him fixate on Cloud, because they aren't sure what else to do with him that echoes things he actually did in the games. It's why he pivots to expressly talking about Jenova and following in her footsteps in AC, and drops a lot of the ambiguous meteor-talk for something more directly informed by the more memorable and accessible concept of his evil alien mom. This is a character that truly becomes very boring if you aren't looking at him as a narrative tool and at his specific narrative context in OG, and so flat if you fixate exclusively on character-to-character relationships instead. This is like one of the core criticisms of fools who played this game and came away with "momma's boy."
Idk man this guy is my favorite cautionary tale and quite frankly I do not think he cautions against anything in particular anymore.

So matching dishes and chairs…do you think they actually do kind of live together but take turns at each other’s homes? Maybe spend nights separately so they can introvert and/or not bring too much attention to their living situation?

I think they live separately, but… they probably stay over at each other’s places often. Some of the things that’s considered ‘normal’ or ‘expected’ just don’t count for them. They can’t live together publicly (imo). I also think this just works for them.. and stability in a life with lots happening at all times is probably nice. They can go to each other whenever they want, and also have space when they need it.
