Some of my thoughts and headcanons about the covens/school tracks and how connect to subjects in our world:
There are Nine Tracks:
Healing, Beast Keeping and Plants are all based around biology, only with different specializations (medicine+anatomy, zoology, botany).
Potions, Construction and Abominations all lean more towards engineering, physics and chemistry, "hard sciences"
Which leaves Illusion, Bard and Oracle. Especially the first two are more geared towards the arts, with the last one not quite fitting in.
More of my thoughts about each track under the cut:
Beyond staring into crystal balls and summoning spirits, the Oracle Track actually includes a lot of math, geometry and statistics. It's used to predict the weather, to make smart business decisions, to make risk assessments - basically all things we use modern computers and complex algorithms for in our world. Good for business and administrative work.
Construction in general is very similar to engineering, so it requires understanding of physics, mechanics and material science, at least if you want to achieve Mastery. We've mostly seen this magic used for buildings, but construction witches probably also built machines and vehicles and appliances (Someone must have built that ship in S2E1).
Potions is similar to chemistry and the industry surrounding it. Obviously potions are used as medicine, but we also see it used to produce bombs or imbue other materials with special properties (e.g. Witches Wool). (Someone on the potion track could also go into cooking, as that kinda falls under the same category.)
Abominations is harder to categorize. It seems to be somewhere in between robotics, chemistry and martial art. So similar to the previous two. This seems to be the preferred Track for law enforcement, but abominations are also used as cheap labor for menial tasks, or built into contraptions.
The Bard Track is primarily shown as focused on musicians. But beyond that, it might also include theater and other performative arts. Literature is also an important part of the track.
The Illusion Track on the other hand veers more towards visual arts. Good illusions require good observations. Someone who wants to go into film or photography could also get their start here.

The Healing Track, beyond anatomy and medicine, also teaches the basics of Potions, just enough to understand interactions, allergies, etc.
Beast Keeping and Plant Track are basically what you expect. Those covens hold a lot of power because they are important for farming and agriculture, but have less diverse opportunities than most other tracks.
(I also assume that there are different degrees you can achieve in each track, with Master being the highest and taking the longest.)
Amphibia Characters and what Owl House Tracks they Would Join.
So I have been rewatching both the owl house and Amphibia while stuck at home this weekend. So of course I start wondering about which tracks the amphibia characters would be in in the Owl House universe. Here are the idea's I came up with. ... P.S. Anyone else ever think about how with how big art and sports are in human life; the isles has one track that fits in all the arts and none for athletics?... Back to the topic at hand
Sasha Waybright: 2 tracks, Abomination and Healing. Abomination is easy, it's arguably the most powerful track; and you create your own minions to use for tasks. Sasha is a leader and she likes to be in control, so she would join the abomination track. As for why she is also in Healing, you have to remember that at her core Sasha wants to look out for people and take care of them. That is super important to her. She grew up to become a therapist so she could help kids who are struggling with their issues, like she once did. Healing would symbolize that.
Anne Boonchuy: 2 tracks Plant and Beast Keeping. Anne's was the one I had to think the most on (again no athletics coven to make it easy) and I was very tempted to just go the "Luz way" out and put her in all the tracks. But ultimately I settled on these two. The most important things to Anne are people and places, and honestly just different kinds of life in general. Look at her bonds with Domino, the citizens of wartwood, how quickly she adapted to working on the farm and using Amphibia's landscapes to her advantage. Plus these two fit best into her future career.
Marcy Wu: 3 tracks Construction, Illusion, and potions. Marcy gets to take three tracks because she is smart enough to handle that big a workload. Construction becasue she spent her time in Newtopia coming up with improvements to the city's structures, and tried to do the same with Wartwood. Illusion because she loves fantasy and make-believe so much. Potions because she actually worked on them with Maddie.
Hop Pop: he tried to learn Bard magic when he was younger (to be an actor), but ultimately he failed at it and changed to the plant track. He loves the plant track, but still misses the bard track from time to time.
Sprig: Bard track, plays the fiddle. After the events of the show he may duel track with potions, since wasn't he kinda interested in science too.
Polly: abomination track. Frobo is her prized creation and she will devote countless hours to fixing up and adding onto him.
Grime: joined the emperor's coven when he reached adulthood. Before that he was a bard and his specialty was the harp.
Olivia: Plant coven, since she is so protective of amphibian flora
General Yunan: like Grime she joined the emperor's coven when she reached adulthood. Before that I will say she was in construction as like a weapons forger.
King Andrias: Was forced into Oracle by The Core. Quit it after The Core's defeat, and is now using gliph magic to learn the other tracks..
Toadstool and Toadie: both Oracle, unlike Andrais they chose and like it.
ivy: construction and illusion. She likes to build training courses for herself so her skills stay sharp.
Wally: Bard.
Maddie: Potions and Healing.
Bonous:
Ms. Boonchuy: Potions, but she uses it for cooking delicious Thai foods.
Mr.Boonchuy: illusion. Because he is a fantasy Gamer.

construction track is kinda like the cardboard box kids in that they're really good at making hideouts and tents and all kinds of cool places across the creek, they're known for making hideouts just for fun and then forgetting about them for some animals or another kid to move in. the tunnels Gus had under Hexside in canon are tunnels he and Matt worked together on after they got along to go under and around the creek, its their biggest project
potion track is those kids who would throw a bunch of random shit into a water balloon and throw it at kids, sell some drink mixes and claim them to be potions, and mostly just those kids who would find a bunch of dirt and make a mudpie. sort of like the science kids who see what their chemical reactions would look like
oracle track is basically the same and claim they can see the future with crystal balls and also have a bunch of hex's and hold 'em cards they use to predict a kids future.
the different tracks aren't the Only groups of kids there are, there are a few subgroups and other completely different ones, but the tracks are the Main groups of kids
Originally this was supposed to be my Owl House self insert, but I mean..this doesn’t look much like me, and I made my own later on anyway, so: This is Aspen Calamus-Ferox, my (currently) one and only TOH OC. They are in the construction and illusion tracks at Hexside, and work as a Boiling Isles delivery person outside of school. Yes, they made those wings themself.
