Rander Alupuri 2.0 (#ConsultingChefChronicles) . . This was a dish that was envisioned by me whilst working on a ultra fine dining project of mine named La Marque World Dining. . We went to Rander walled City area of Surat for research of this menu because we wanted to explore the relationship of Surati street favorite Alupuri and it's relationship with Burmese Cuisine. . What you see in the picture is the maida puris topped with Paneer (instead of the White Peas as per Rander cooking tradition) tempered with the same whole spices (predominantly Dhaniya and Jeera with homemade Garam Masala), then the hint of coriander leaves for the freshness, onion rings that were splashed with some lemon juice for that acidity and the home made papdi (fried roti) for the texture. The sauce used in the plating is basically the Burmese curry sauce (usually served in a soupy Avatar with the same elements, but thickened here for visual appeal) . Ingredients and flavors are the most important aspect of cooking and if there is just vanity of looks in the food but no soul, it is not food for me. . .
