While Stefano enjoys freshly sliced truffles on his pasta, I absolutely love truffles with a truffled poached egg on toast. I can eat this combination for breakfast, lunch or dinner. From my Tuscan kitchen, I prepared my truffled poached egg on a bed of rucola and decadently topped with fresh black truffles. Don’t forget to finish your egg (eggs) with a sprinkle of Conti Truffle Salt. There is no need for dressing. Once the yolk oozes from the eggs, it coats my sliced truffles, toast and rucola creating the best “dressing” this truffle lover can ever imagine. Serve with a bubbly Prosecco.
