I wanted to prepare something light and easy for dinner. From My Tuscan Kitchen, I oven roasted salmon until golden brown with a crisp on the skin. Because, Stefano is not a crispy salmon skin eater and I am! There is nothing than an American cheeseburger every once in a while. Since, we are a Tuscan household of truffle lovers, I was inspired to trufflize our cheeseburgers. From my Tuscan kitchen, I present my version of a good ol’ American burger with Tuscan truffle ingredients. The cheese is a semi-aged organic truffle cheese. You can’t see them but, I could not resist a few slices of fresh black truffles on my patty. Ignore the ketchup. I added our Conti Bruschetta al Tartufo and a sprinkle of Conti Truffle Salt. The natural and subtle sweetness from the tomatoes in the brushetta is a flavor that compliments every bite. While Stefano enjoys freshly sliced truffles on his pasta, I absolutely love truffles with a truffled poached egg on toast. I can eat this combination for breakfast, lunch or dinner. From my Tuscan kitchen, I prepared my truffled poached egg on a bed of rucola and decadently topped with fresh black truffles. Don’t forget to finish your egg (eggs) with a sprinkle of Conti Truffle Salt. There is no need for dressing. Once the yolk oozes from the eggs, it coats my sliced truffles, toast and rucola creating the best “dressing” this truffle lover can ever imagine. Serve with a bubbly Prosecco.
