One of my accomplished dishes would be risotto (made with traditional carnaroli). I adore creating a variety of recipes by changing cheeses, broth, veggies, herbs, spices or adding a meat for a hearty one dish meal. I found my Conti Lardo con Tartufo in the fridge and wanted to incorporate it as an ingredient. From my Tuscan kitchen, I prepared fiori di zucca con lardo tartufato risotto. The combination of lardo, truffle and zucchini flowers are delicate, subtle, elegant and a great pairing of flavors. Serve with a crisp, Tuscan Vermentino, Chardonnay or Pinot Grigio.
