The flavors of mango and saffron come together in a rich and creamy frozen dessert called Mango Saffron Kulfi. A traditional Indian dessert that people like to eat in the summer.
Ingredients: 2 cups mango pulp. 1 cup condensed milk. 1 cup heavy cream. 1/4 teaspoon saffron threads. 2 tablespoons warm milk. 1/4 cup chopped nuts such as almonds and pistachios. 1 teaspoon cardamom powder.
Instructions: In a small bowl, soak saffron threads in warm milk for 10 minutes. In a blender, combine mango pulp, condensed milk, heavy cream, soaked saffron with milk, and cardamom powder. Blend until smooth. Add chopped nuts to the mixture and stir well. Pour the mixture into kulfi molds or small cups. Cover the molds/cups with aluminum foil and insert popsicle sticks into the center of each mold/cup. Freeze for at least 6 hours or until completely set. To serve, remove kulfi from the molds/cups by dipping them in warm water for a few seconds. Then, gently pull out the kulfi and serve immediately.
